Macadamia Nut Chicken
Salad
1 tsp. Dried Tarragon (soak in 2 tbs. White Wine for 45 mins.) 1 cup Low Fat Mayonnaise 1 cup Low Fat Sour Cream pinch of Pepper 1 cup Macadamia Nuts, chopped Lemon Wedges, for garnish |
Cook chicken in microwave until cooked through. Chill and cut into tiny bite-sized pieces. Combine chicken and tarragon. Add mayonnaise to sour cream. Season with pepper to taste. Toss the chicken and macadamia nuts with the mayonnaise mix. Arrange salad on a bed of lettuce and garnish with a spring of tarragon and lemon wedge to be squeezed lightly over salad. |
